植物产地：原产于亚洲西部。
物质：大蒜不仅是重要的调味品，而且具有多种药用功,大蒜的要用功效主要来源于含硫化合物，而这些含硫化合物的母体是酸氨酸，蒜体受损后，算氨酸和算酶接触，在空气参与下，蒜氨酸分解成2-丙烯基亚磺酸、丙酮和氨，其中，2-丙烯基亚磺酸可以进一步发生二聚生成蒜素。大蒜素极不稳定，可以分解为其他的挥发性含硫化合物。
含量及检测方法：蒜辣素 Allicin1.0%、蒜氨酸 Alliin2.0%
